There is a nontrivial chance of not honoring your offers. The year before last year (note: they did not hire last year due to power struggle), a few candidates who received the offers from the school of finance at Nankai University eventually ended up with no job for around one year. They did allow a subset of those candidates to join in the next spring. The reason was, ironically, to save their reputation. Of course, without other choices, accepting the offer is the only rational action. But I suggest you always prepare for the worst and reserve an exit option when s**ts happen. If you have an R&R at a top journal after working there for a while, don't forget to consider moving for a better/safer place. Don't think this is immoral. Believe me, they'll fire you without any hesitations when they believe you have no value.
